Guildford Borough Council’s Environmental Health and Licensing Team provide the CIEH Level 2 Award in Food Safety in Catering (formerly the Foundation Certificate in Food Hygiene) approved by the Chartered Institute of Environmental Health
The overall aim of the course is to develop a level of understanding for food handlers on the basic principles of food hygiene to enable them to improve standards and help prevent food poisoning.
The Syllabus for the course covers:

Food safety hazards

Temperature control

Refrigeration, chilling and cold holding

Cooking, hot holding and reheating

Food handling

Principles of safe food storage

Cleaning
-
Food premises and equipment
All candidates will receive an illustrated handbook and detailed information handouts.
The course is approximately six hours in length with a short written multiple-choice test at the end. Successful candidates will be awarded the Level 2 Award in Food Safety in Catering.
An oral (spoken) exam can be offered. This will need to be arranged in advance.
Candidates who fail the test may re-sit on another course for a fee of £15 to cover our administration costs.
